Let’s make Christmas Fruit Salad!
This red and green fruit salad recipe is a great way to add a little color to the holiday table.

Ingredients

For Honey Lime Dressing:
2 teaspoons lime zest (Zest of 1 lime)
2 Tablespoons juice (Juice of 1 lime)
2 Tablespoons honey (use agave, for vegan)
Red Fruits
1 cup fresh strawberries, sliced
1 cup fresh raspberries
1 cup pomegranate seeds
Green Fruits
2 cups green grapes, cut half (or thirds, if large)
1 cup green kiwi, quartered lengthwise and sliced (about 3 kiwi)

Make The Dressing:
In a small bowl, combine lime zest, lime juice, and honey.
Whisk to combine until well blended. (Dressing can be made a day in advance and stored in the refrigerator.)
Wash & Prep Fruit:
If you haven’t already, wash and prepare the fruit.
Try to cut everything into small, bite-sized pieces. This will look better and be easier to eat!
Combine Fruit:
In a large bowl, combine grapes, strawberries, kiwi, raspberries, and pomegranate seeds.
Gently Coat With Dressing:
Drizzle salad with honey lime dressing and GENTLY stir to coat.
(Try to be extra gentle with the raspberries! You can even add them last, if you like.)
Serve & Store:
Transfer to a serving bowl and enjoy right away or serve within 2 hours for best results.
Store leftover fruit salad in an airtight container in the fridge and eat within 2 days. (It will soften and get more juicy each day!)
Fruit Prep Tips

Slice Strawberries:
Remove strawberry stems, cut the strawberries in half lengthwise and then cut them into slices.
You’ll get small, bite-sized pieces that look beautiful!
Slice Grapes:
I recommend cutting green grapes in half (or even into thirds if they’re large!), so they’re easier to eat.
If you’re serving small children, cut grapes in half lengthwise for safety.
Use Care With Raspberries:
Be super gentle with the raspberries, as they’re the most delicate!
Protect Apples:
If you’re adding apples and prepping them in advance, you can first toss them with citrus juice to help prevent browning.
Pineapple juice, orange juice, lemon juice, and lime juice all work!
(If you’re adding apples right away, there’s no need for this step since they honey-lime dressing will help protect them.)

Make Ahead Tips:
For best results, prep and store the dressing and fruit separately until right before serving.
I recommend storing fruit individually, if possible. Serve within 2 hours of making this salad.
Try it With Mint!:
Sometimes, I love to mix a little minced fresh mint into the dressing with the lime zest.
Or you can garnish the salad with a sprig of mint for pretty presentation.
